Tomasz Janiczek learned the authentic flavors of farm fresh eggs, fresh-picked vegetables, and raw milk growing up on his parents’ small, ecological farm. For him, the “real” taste is the only taste. He was privileged to have constant access to the freshest, highest quality products to practice on and hone his culinary skills. Combining his rich knowledge of the produce with an unerring instinct, he creates unexpected compositions that are truly innovative but also, somehow, deliciously familiar. He captured us away with his talent, imagination, and his precision. He’s only 25 years old, and maybe, because of that, he is slightly shy. He says that he expresses his positive energy and empathy for people through the dishes he cooks for them. The most beautiful gifts of autumn, straight from the farmer’s market at Forteca, interpreted by Tomasz Janiczek.
